Cranberry and White Chocolate Cookies


Day One of the 12 Days of Christmas Bake and Create is here!

To celebrate Day one we are sharing a scrumptious cookie recipe using cranberries and white chocolate


125 grams of butter, soft
1/2 Cup Caster Sugar
2 Cups of Plain Flour
1 Egg
1 Teaspoon of Baking Powder
1 Teaspoon of Vanilla Extract
1/4  Cup dried cranberries
1/4 Cup white chocolate chips
1. Preheat the oven to 180 degrees and line a baking tray with baking paper (I used two trays but you could always do the cookies in batches)
2. Combine Butter, Caster Sugar and Vanilla Extract into a bowl and use an Electric Mixer to mix the ingredients together, until light and creamy
3. Add the egg and mix until combined
4. Gently sift the Plain Flour and Baking Powder into the wet mixture
5. Once combined gently fold through your dried cranberries and white chocolate chips
6. Roll the mixture into small balls,about the size of a 20 cent piece and place on the baking tray and flatten slightly
7. Place in the oven and bake for 10 minutes
8. Place the cookies on a wire rack to cool and then enjoy!
Makes 15 cookies
